Colombian Pink Bourbon Beans

Our first coffee from outside Yemen. Pink Bourbon is grown in the high country of southern Colombia and takes its name from its cherries, which ripen to a blush pink instead of the usual red or yellow.

Despite the name, recent genetic work places Pink Bourbon closer to the Ethiopian landrace varieties than to Bourbon itself, and the cup tends to show it: floral and tea-like where a classic Colombian is nutty and round.

Expect a clean, bright cup with jasmine, stone fruit and citrus over a light syrupy sweetness. A different register from our Yemeni naturals, and an easy place to start if you brew filter.
